Green peas are small, round green seeds of the common pea plant, harvested before full maturity when they are still sweet and tender. They are one of the most popular vegetables thanks to their mild, sweet flavor and ease of preparation. Available fresh, frozen, or canned, frozen peas retain most of their nutrients and are nearly equivalent to fresh. They are used as a side dish, in soups, risotto, pasta, salads, or as part of fried rice. In Czech cuisine, they are traditionally added to potato salad and soups.
