Green Split Peas

Green split peas are a dried variety of pea with the skin removed and divided into two halves, with their signature green color preserved even after cooking. They have a mildly sweet, slightly earthy flavor and a higher fiber content than the yellow variant. Once cooked they create a thick, creamy texture and a vibrant green soup. They are popular in Nordic, British (pea soup), and Indian cuisine (matar dal). An excellent source of plant protein, fiber, and minerals.
