List of allergens

Allergens are substances that can trigger an allergic reaction in sensitive individuals. They can occur naturally in food or be added during production. European and national legislation requires consumers to be informed about the presence of major allergens, so that people with food allergies or intolerances can make safe choices about what they consume.

An allergic reaction can range in severity — from mild irritation to serious health issues (such as shortness of breath or anaphylactic shock). That's why it's important to pay close attention to allergen labeling and always clearly indicate them on menus, packaging and dish descriptions.

1. Cereals Containing Gluten
Protein found in wheat, rye, barley, oats, spelt, etc.

2. Crustaceans
Shrimp, crab, lobster, crayfish and products made from them.

4. Fish

5. Peanuts
Legume rich in proteins, vegetable oil and fats.
Peanuts and products made from them, often hidden in sweets, sauces, and pastries.
6. Soy
Soybeans and products made from them (tofu, tempeh, soy milk etc.).
Soybeans and their products (e.g., tofu, soy sauces, lecithin).
7. Milk
Cow, goat, sheep milk and products made from them, including lactose.
Milk of all kinds and dairy products including lactose.
8. Nuts
Almonds, hazelnuts, walnuts, cashews, pistachios, pecans etc.

9. Celery
Bulb, stalk, root and seeds of celery and products made from them.

14. Mollusks
