Sugar Beet
Sugar beet is a biennial plant grown primarily for the high sucrose content in its root, from which a large share of the world'so sugar is produced. Fresh sugar beet has a sweet, earthy flavour and is less commonly used in everyday cooking than other vegetables, it is occasionally added to salads, soups, or used for fermentation. Sugar Snap Peas
Sugar snap peas are a variety of pea where the entire pod, including the immature seeds, is eaten. They are ideal for quick cooking, a brief blanch or a few minutes in a hot pan is all they need. They are a good source of vitamins C and K, folate, and dietary fibre. When buying, look for firm, bright green pods without blemishes.
Sugar-Coated Peanuts
Sugar-coated peanuts are a popular sweet snack in which roasted peanuts are encased in a crunchy sugar shell. The sugar coating can be plain sweet or flavoured with cinnamon, vanilla or cocoa. They are widely available as a ready-made treat but can also be easily prepared at home. They work well as a dessert, a snack on their own, or as a topping for sweet dishes such as ice cream, pancakes and fruit salads. In confectionery, they are used in chocolates, nougat and biscuit fillings. Compared to plain peanuts, they have a higher sugar content while retaining a good amount of protein and fat.
Sultanas
Sultanas are seedless dried grapes with a light golden-brown colour, originally derived from the Thompson Seedless variety grown in the Sultanie region of Turkey. They are sweeter and softer than classic dark raisins, with a delicate fruity flavour. In the kitchen they are widely used in baking, added to cakes, biscuits, muffins, loaves, and festive pastries. They also work well in savoury dishes, such as pilafs, couscous, Indian curries, or Moroccan tagine, where they balance spicy flavours. They are also excellent in muesli, yoghurt, or enjoyed on their own as a healthy snack.
Sumac
Sumac is a spice made from the dried and ground berries of the Rhus coriaria shrub, native to the Middle East and Mediterranean region. It has a distinctly tangy, slightly astringent flavor with a fruity undertone and a deep burgundy-red color. In cooking, it serves as a natural substitute for lemon juice or vinegar, adding pleasant acidity without extra liquid. It pairs wonderfully with meat, fish, fattoush salad, hummus, and grilled vegetables. In Turkish and Arab cuisine, it is commonly sprinkled over onion salads and kebabs.
