Sumac is a spice made from the dried and ground berries of the Rhus coriaria shrub, native to the Middle East and Mediterranean region. It has a distinctly tangy, slightly astringent flavor with a fruity undertone and a deep burgundy-red color. In cooking, it serves as a natural substitute for lemon juice or vinegar, adding pleasant acidity without extra liquid. It pairs wonderfully with meat, fish, fattoush salad, hummus, and grilled vegetables. In Turkish and Arab cuisine, it is commonly sprinkled over onion salads and kebabs. Sumac is rich in antioxidants and vitamin C, and is most commonly sold as a dark red ground powder.
