Alginate

Alginate (sodium alginate) is a natural polysaccharide derived from brown seaweeds, particularly the genera Macrocystis and Laminaria. In the food industry, it is used as a thickener, gelling agent, and stabilizer, listed in the EU as additives E401, E405. When it comes into contact with calcium ions, it forms a firm gel, a property exploited in molecular gastronomy for spherification, creating caviar-like pearls or liquid-filled capsules. It is also added to ice creams, dressings, canned goods, and industrially produced foods. It is tasteless and odorless, so it does not affect the final flavor of a dish. Alginate is safe to consume and suitable for vegans.
