Almond extract is a concentrated flavouring ingredient that mimics the sweet, distinctive aroma and taste of almonds. It is produced either synthetically (most commonly from benzaldehyde) or by natural extraction from bitter almonds, cherry stones, or apricot kernels. It is used in confectionery and baking to flavour doughs, creams, glazes, ice creams, and liqueurs. Only a few drops are needed, as it is a highly concentrated product.
