Almejas

Almejas is the Spanish word for clams (veneridae), a popular ingredient in Spanish and Portuguese cuisine. These are mollusks with a firm shell and juicy, delicately salty meat. They are most commonly prepared with garlic, white wine, and parsley (almejas a la marinera), and are also added to paella, rice dishes, or pasta. The meat is tender with a distinctive oceanic flavor. Before cooking, the clams must be thoroughly rinsed and soaked to remove sand. They are a rich source of protein, iron, and B vitamins. They are available in stores fresh, frozen, and canned.
