Step by step process

Preparation

    Chill four cocktail glasses in the freezer or fill them with ice for a few minutes.

    Squeeze the limes for fresh juice and strain it through a fine strainer so the juice is clear.

    Prepare simple syrup and measure out all ingredients for easy mixing.

Shaking

    Fill the shaker three-quarters full with ice so the drink cools quickly and evenly.

    Pour in the gin, lime juice, and simple syrup, seal tightly, and shake vigorously for 12-15 seconds.

    TIP: 

    After shaking, strain the cocktail first through a fine-mesh sieve and then through a second one to remove ice shards and lime pulp. The drink will be clear and cold.

    The shaker should become dewy on the outside. this indicates the cocktail is properly chilled and diluted.

Serving

    Discard the ice from the glasses and strain the cocktail through a strainer into the chilled glasses to keep ice shards out of the drink.

    Garnish each cocktail with a lime wheel on the rim or floated on the surface and serve immediately.

More tips:

Prefer a drier Gimlet? Reduce the simple syrup or use lime cordial and omit the syrup.

For a perfectly smooth drink, double strain: through a bar strainer and then a fine mesh sieve.
