Chill four cocktail glasses in the freezer or fill them with ice for a few minutes, a classic gimlet needs an ice-cold glass.

Squeeze the limes for fresh juice and strain it through a fine-mesh sieve so the juice is clear.

Measure out exactly 60 ml gin, 22 ml fresh lime juice, and 15 ml simple syrup, the right ratio of ingredients is the foundation of a good cocktail.
Shaking

Fill the shaker three-quarters full with ice so the cocktail chills quickly and evenly.

Pour in the gin, lime juice, and simple syrup, seal tightly, and shake vigorously for 12-15 seconds.

Check that the shaker is frosted on the outside.
Serving

Discard the ice from the glasses and strain the cocktail through a fine strainer into the chilled glasses to keep ice shards out.

Garnish each cocktail with a lime wheel on the rim or floated on the surface and serve immediately.

Prefer a drier Gimlet? Reduce the simple syrup or use lime cordial instead.
