Step by step process

Preparation

    Chill four champagne flutes in the freezer or in ice water.

    Wash the lemon and cut a long thin strip of peel to use as a garnish.

    Cut the lemon and juice it. Measure 60 ml of fresh juice without pulp.

    TIP: 

    First, lightly warm the lemon and gently press it to release the juice. Then use a handheld citrus press and strain the juice through a fine sieve to remove the pulp and seeds.

    Prepare enough ice for chilling the drink and for mixing.

Mixing

    Fill a sealed shaker with ice, add gin, lemon juice, and simple syrup.

    Shake vigorously for about 10-12 seconds, until well chilled.

    Strain the drink through a fine sieve into the chilled glasses, filling them about halfway.

    Top up with brut sparkling wine and stir very gently to preserve the bubbles.

Serving

    Twist the lemon peel over the glass to release the oils, then drop it in as a garnish.

    Serve immediately, well chilled, as a refreshing aperitif.

More tips:

No Champagne? Choose a dry cava or brut prosecco. Semi-sweet styles will overly sweeten the cocktail.

Adjust sweetness with the syrup: for a tarter version use 40 ml, for a milder one 80 ml for the whole batch.
