In a bowl, whisk the eggs with milk, granulated sugar, vanilla extract, a pinch of salt, and, if desired, ground cinnamon until the mixture is smooth and slightly frothy.

Arrange the slices of sandwich bread on a cutting board. If they have a thick crust, trim the edges so they absorb better and cook evenly.
Cooking

Heat a frying pan over medium heat and melt a knob of butter so the bottom is lightly coated.

Dip each slice of sandwich bread into the egg mixture on both sides for about 5–10 seconds, let it drain briefly, and place it in the pan.
TIP:Dip the slices quickly for 5–10 seconds on both sides and immediately place them on the pan. Let any excess liquid drip off briefly to prevent sogginess and ensure even browning.

Fry for 2–3 minutes on each side until golden and crispy. Add a little more butter between batches if needed.

Transfer the cooked toasts to a plate or a rack and keep them warm briefly while you finish the rest.
Serving

Serve immediately, ideally halved into triangles, sprinkled with powdered sugar and drizzled with maple syrup.

Add fresh fruit to taste and serve warm. At that moment the toasts are tender inside and crispy on the outside.
More tips:
For best results, use day-old sandwich bread. Fresh bread soaks up too much and can become soggy.
Don't leave the slices in the mixture for too long, so the center doesn't stay wet. A short soak and even cooking over medium heat is enough.
