Czech Garlic Toasts with Spicy Meat

Meat topping

Czech garlic toasts with spicy meat are only as good as the topping. Chop the onion finely and fry it in lard until golden. Add both kinds of ground meat and fry, stirring often, until the meat crumbles and starts to brown.

Stir in the tomato paste, sweet paprika and Worcestershire sauce. Add a few spoonfuls of water, season with salt and pepper, and add hot paprika if you like it fiery.

Simmer the mixture uncovered for 10 to 15 minutes so the flavors meld and the excess liquid evaporates. It should be thick, not dry.
The toasts

Fry the bread slices in hot oil until golden on both sides. Let them drain briefly on a paper towel.

Rub each toast with a garlic clove while still hot. The garlic is what turns fried bread into a proper Czech toast.
Serving

Heap the hot meat mixture onto the toasts and serve right away. Add rings of raw onion if you like.
More tips:
You can make the topping ahead. It keeps in the fridge for two days and tastes even better reheated.
The bread should be a day or two old, fresh bread soaks up too much oil. Caraway rye bread works best.
Instead of frying, you can toast the bread slices in a dry pan or a toaster for a lighter version.
