Czech Breaded Fried Mushrooms

Preparation

Breaded fried mushrooms start with dry mushrooms. Rinse them only briefly or wipe them with a damp cloth and let them dry completely, the coating will not stick to wet mushrooms.

Set up the coating station: flour with a pinch of salt on one plate, beaten eggs on the second and breadcrumbs on the third.

Coat the whole mushrooms in flour, egg and breadcrumbs, one after another. Press the coating on with your palm so it does not crack while frying.

For an extra crispy crust, repeat the egg and breadcrumb layers once more.
Frying

Heat a generous layer of oil in a deep pan to 170 °C. Fry the mushrooms in batches for 3 to 4 minutes until golden, turning them now and then.

Drain the fried mushrooms on a paper towel and salt them right away. Serve hot with tartar sauce.
More tips:
Choose smaller, firm mushrooms with closed caps. Large ones release water and the crust softens.
Check the oil temperature with a thermometer or a breadcrumb, the oil around it should bubble up immediately.
The triple coating works just as well with cauliflower or cheese, the technique is the same.
