Crispy Homemade Fries

Preparation

Peel the potatoes (or leave a thin skin), wash them, and cut lengthwise into fries about 1 cm thick.

Place them in a large bowl, cover with cold water, and soak for 30 minutes to remove excess starch.
TIP:Soak potatoes in cold water for at least 30 minutes, then dry them with a paper towel. Dry potatoes hold their shape better and will yield a crisper crust when fried.

Drain the fries in a colander, rinse briefly under cold water again, and thoroughly dry with a kitchen towel.

Preheat the oil in a fryer to 150 °C. Check the temperature with a thermometer to ensure the first fry is gentle.
Frying

Fry the fries in batches at 150 °C for 5-7 minutes, just until softened without significant coloring. Then remove them with tongs and let drain.

Increase the oil temperature to 185-190 °C and fry the fries again in batches for 2-3 minutes until golden and crispy.
TIP:Fry twice: first at 150 °C until partially tender, then let it rest and perform a second fry at 185-190 °C for 2-3 minutes until golden brown. Result: a crispy crust and a soft center.

Right after removing, let them drain briefly and transfer to a bowl. Season with salt and toss gently to distribute the salt evenly.
Serving

Serve hot and crispy, ideally immediately after the second fry, optionally with ketchup to taste.

Serve in a single loose layer so the fries don't steam.
More tips:
For an extra-crispy exterior, let the fries cool for 15 minutes after the first fry on a baking sheet in a single layer. Do the second fry just before serving.
