Homemade Fries in the Air Fryer

A crisp shell, a fluffy center, and just a spoonful of oil. That is exactly what homemade fries in the air fryer deliver when you make them from fresh potatoes cut into thin sticks. Hot air wraps every fry golden without a bath in fat, so you get real crunch with far less oil than deep frying. All you need is potatoes, a pinch of seasoning, and about half an hour before you pull a golden batch from the air fryer to serve with meat, with a beer, or simply with a dip.

Step by step process

Preparing the potatoes

    Reach for starchy potatoes, which fall apart beautifully on the inside. Peel 800 g of potatoes and cut them into sticks roughly as thick as a pencil. This is how homemade fries turn out crispy outside and soft inside.

    Put the cut fries into a bowl of cold water and let them rest for at least 20 minutes. The excess starch rinses out, so after baking they stay firm and brown more evenly.

    TIP: 

    Rinse thin potato slices in cold water until the water runs almost clear. This removes excess starch, helps prevent them from sticking during frying, and makes the chips crispier.

    Pour off the water and dry the fries thoroughly with a clean towel. The drier the surface, the crispier the result. Any moisture would just steam inside the air fryer instead of letting the fries bake.

Baking in the air fryer

    Transfer the dried fries to a bowl, drizzle with oil, and toss so the oil coats them evenly. Add the sweet paprika, garlic powder, and ground pepper, then toss again.

    Preheat the air fryer to 190 °C. Spread the fries in the basket in a single layer so they do not overlap, and cook for 18 to 22 minutes.

    Pull the basket out twice during cooking and shake the fries so they cook through on all sides. Salt them right after taking them out and serve with ketchup or your favorite dip.

More tips:

Do not overcrowd the basket. In two smaller batches the fries always come out crispier than in one tightly packed layer.
