Crispy Air Fryer Halloumi

Crispy halloumi from the air fryer is ready in about fifteen minutes and without a drop of burnt oil. The cheese firms up into a golden, lightly crackling crust on the outside while staying soft and stretchy inside. You simply drizzle it with olive oil, season it with thyme and smoked paprika, and lay it out in the fryer basket. A spoonful of honey and a few drops of lemon finish it off and balance the salty cheese beautifully. Great as a warm starter, with wine, or as a quick vegetarian dinner.

Step by step process

Prep and seasoning

    For crispy halloumi, cut the cheese into slices or sticks about 1 cm thick. Gently blot the excess moisture from the surface with a clean towel, because a dry surface is the key to a nice sear in the air fryer.

    Put the slices in a bowl, drizzle them with olive oil, and lightly coat both sides so the seasoning sticks to them later.

    Sprinkle evenly with thyme, smoked paprika, and freshly ground black pepper. Then let them rest for a few minutes so the spice flavors bond with the surface of the cheese.

Air frying and serving

    Preheat the air fryer to 200 C. Arrange the seasoned pieces in the basket in a single layer so they do not touch, otherwise they steam rather than brown.

    Cook for about 8 to 10 minutes and carefully turn the pieces halfway through. The finished cheese has a golden, firm crust and a still soft, stretchy center.

    Transfer to a plate, drizzle with honey and lemon juice, and scatter over the toasted sesame seeds. Serve right away, while the dish is warm and invitingly stretchy.

    TIP: 

    Tip: warm the lemon briefly (5-10 seconds) so the juice flows more easily. Cut it in half and squeeze the juice into a container. Catch the seeds, and if desired, squeeze the juice from both sides of each half. You'll get more juice.

More tips:

Do not salt the halloumi before cooking. It is naturally very salty, and extra salt would make it taste sharp.

If you do not like a stretchy center, leave the cheese in the air fryer for 2 minutes longer. It will be firmer and crispier.
