Preparation

A good beer cheese spread needs softened ingredients. Take the cheese and butter out of the fridge an hour ahead so they soften and mash easily.

Peel the onion and chop it as finely as you can. Keep a few rings for serving.
Mixing

In a bowl, mash the cheese and butter with a fork into a smooth paste. A few lumps are fine, they belong in a pub classic.

Stir in the mustard, paprika and chopped onion and add a few spoonfuls of beer. Season with salt and pepper and mix well.
Resting and serving

Cover the mixture and let it rest in the fridge for at least 12 hours so the flavors meld and the cheese opens up.

Let it soften at room temperature before serving. It tastes best on fresh bread with rings of raw onion.
More tips:
You can use Romadur instead of Olomouc cheese for a milder, creamier spread.
The riper the cheese, the sharper the result. If you like a real punch, let it ripen outside the fridge for a few days before mixing.
A pale lager adds a gentle bitterness, dark beer a sweeter note. Add it by the spoonful so the spread does not turn runny.
