Preparation

  1. 1

    Chill 4 lowball or highball glasses and wash the orange thoroughly.

    TIP: 

    Place drinking glasses in the freezer for 3-5 minutes (or in an ice bath). After chilling, dry them and fill with ice. This will keep the drink colder and more consistently chilled.

    Cut thin orange slices or prepare an orange peel. fill the glasses three-quarters full with large ice cubes.

Mixing

    Measure the Campari and sweet vermouth into a jigger and divide them evenly among 4 glasses with ice.

    Top up with well-chilled soda water (approximately 60 ml per glass) and stir gently once or twice.

    TIP: 

    Stir the sparkling drink gently with a bar spoon along the inside edge of the glass, and swirl only a few times. This minimizes the loss of bubbles and keeps the drink fizzy.

Serving

    Garnish each glass with an orange slice on the rim or a strip of orange peel.

  2. 6

    Serve immediately, well chilled, as a refreshing aperitif before a meal.

More tips:

Use large, slow-melting ice cubes so the cocktail dilutes less and stays balanced.

Adjust the Campari-to-vermouth ratio to taste: for a more bitter profile 2:1, for a milder taste 1:2.
