Sweet Seffa Couscous with Cinnamon and Honey

Prepare the couscous

Pour the seffa couscous into a large bowl and shake gently to loosen the grains. Pour over the same volume of boiling salted water, cover with a lid or plate and leave to swell undisturbed for 5 minutes.

Fluff the grains with a fork so they separate nicely. Add the butter cut into pieces and stir gently until it has completely melted and coated every grain. Season with a pinch of salt.
Prepare the almonds and raisins

Roughly chop the almonds, or leave them whole, and toast them dry in a pan over medium heat for about 3 minutes until golden and fragrant. Meanwhile soak the raisins in warm water for 10 minutes, then drain and pat dry.
Serve

Transfer the finished couscous to a serving plate and shape it into a tall dome. Arrange the raisins and toasted almonds evenly on top, dust generously with cinnamon and icing sugar and finally drizzle with honey. Serve warm or at room temperature.
More tips:
Fluff the couscous with a fork right after steaming to keep the grains separate.
Toast the almonds just before serving for the best crunch.
