Preparation

Keep the prosecco and soda water well chilled in the refrigerator, ideally for several hours beforehand, so the drink stays cold and sparkling as long as possible.

Wash the orange and cut into thin slices. Fill 4 large wine glasses two-thirds full with ice cubes.
Mixing

Pour 90 ml prosecco into each glass first, then 60 ml Campari. The classic 3:2:1 ratio gives a perfectly balanced spritz - pour slowly so the drink layers gently and stays fizzy.

Top up each glass with approximately 30 ml soda water and gently stir once or twice to combine without losing the effervescence.
TIP:CO2 bubbles easily escape with aggressive stirring. Gentle mixing with a spoon, at most twice, is sufficient to keep the cocktail sparkling. Hard bartending tools damage the drink.
Serving

Garnish each glass with an orange slice on the rim or place the slice directly into the drink. Serve the spritz immediately after making it, while it is well chilled and the bubbles are at their best.
More tips:
For a more intense bitter-sweet profile, use more Campari and less soda water. For a lighter version, increase the soda.
Use plenty of ice: more ice means slower dilution and a longer-chilled spritz.
