Serve this non-alcoholic orange spritz well chilled - chill the glasses and all liquid ingredients in the refrigerator for at least 30 minutes before serving to make the mocktail as refreshing as possible, then serve immediately after mixing.

Wash the orange thoroughly and cut thin slices for garnish. Measure 160 ml of orange juice, 320 ml of tonic water and 320 ml of alcohol-free sparkling wine. You will get the best result with freshly squeezed juice - pasteurised juice has less aroma and more sweetness.
Mixing

Fill the pitcher halfway with ice and pour in the alcohol-free sparkling wine, then the tonic and finally the orange juice. Adding ingredients in this order helps retain more bubbles and creates a beautiful colour gradient.

Add 20-40 ml of elderflower syrup to taste and stir gently with a long bar spoon or by swirling the pitcher to avoid losing the bubbles. The syrup gives the drink a delicate floral aroma and elegant sweetness, as well as a beautiful pink-peach hue.
Serving

Fill the glasses with the remaining ice and divide the mocktail evenly among all glasses. Each serving should be around 200 ml and pairs perfectly with light summer appetisers.

Garnish each glass with a half or thin slice of orange on the rim and a sprig of fresh mint. Serve immediately while the bubbles are lively - after a few minutes the mocktail loses its fizz.
More tips:
Adjust the bitterness by changing the ratio of tonic to alcohol-free sparkling wine. For a sweeter version, add a little more elderflower syrup or use sparkling water in place of some of the tonic.
