Step by step process

Preparing the purée

    Wash the peaches, remove the pits, and peel if needed. Cut the flesh into smaller pieces and place in a blender.

    Add lemon juice and, if necessary, powdered sugar to taste depending on the fruit's sweetness. Blend until smooth and pass the purée through a fine sieve into a bowl.

    TIP: 

    For silky peach purée, push the mixture through a fine sieve. Use the back of the spoon and regularly clean the sieve with warm water. If the purée is thick, add a drop of water and push through again.

Mixing

    Keep all ingredients and glasses well chilled.

    Pour about 40-50 ml of peach purée into each glass. Slowly top up with non-alcoholic sparkling wine (about 150 ml per glass) and stir gently so the purée combines with the bubbles without excessive foaming.

Serving

    Garnish the rim of the glass with a slice of peach and serve immediately, well chilled.

More tips:

If the peaches aren't ripe enough, lightly sweeten the purée or use frozen, thawed peaches for fuller flavor and a smoother texture.
