Grilled Peaches with Honey and Mascarpone

Just a few minutes on a hot grill turn an ordinary peach into a tender summer dessert. Halved and pitted, the fruit caramelizes over the heat, the cut side firms up, and the inside stays juicy. Grilled peaches only need a drizzle of honey, a spoonful of mascarpone, and a scatter of nuts with mint.

Step by step process

Preparing the peaches

    Grilled peaches start with good fruit prep. Wash the peaches, score them along the groove around the pit, and gently twist the halves apart. Remove the pit and, if needed, carve out a little flesh around it to create a shallow hollow.

    Brush the cut side of each half with olive oil so the peaches don't scorch on the grill and caramelize evenly.

Grilling and finishing

    Heat the grill to medium-high. Place the peaches cut side down and grill for 3 to 4 minutes, until they pick up golden stripes and the flesh softens.

    Flip the grilled peaches cut side up and drizzle them with honey right away so it warms into the hot flesh.

    Add a spoonful of mascarpone or sour cream into each hollow, scatter with chopped walnuts, and finish with mint leaves. Serve immediately, while the peaches are still warm.

More tips:

Choose ripe but still firm peaches. Overly soft fruit falls apart on the grill, while hard ones won't develop the sweeter, caramel flavor.
