Grilled Chicken Wings with Honey Marinade and Chive Dip
Ingredients
Step by step process
Marinade
- 1
Pat the chicken wings dry and, if needed, separate them at the joint so they are easier to turn on the grill, cook evenly, and are easier to eat.
- 2
In a bowl, mix together the ketchup, honey, wholegrain mustard, crushed garlic, sweet paprika, hot paprika, lemon juice, olive oil, salt, and black pepper.
TIP:A basic marinade consists of fat, an acidic component, and seasoning. Oil helps carry flavor, lemon juice or vinegar brightens it, and herbs and spices add character. Marinate in the refrigerator and adjust the time to suit the type of ingredient.
- 3
Add the wings to the marinade, coat them thoroughly on all sides, and let them rest for at least 30 minutes so the meat absorbs the full flavor.
Grilling
- 4
Preheat the grill to medium heat and lightly oil the grate so the marinated wings do not stick and can be turned easily with tongs.
- 5
Arrange the wings on the grill in a single layer and cook them for 20 to 25 minutes, turning them regularly so the honey in the marinade does not burn.
TIP:Grill meat with honey, sugar, or a sweet sauce over medium to indirect heat and turn it more often. Sweet ingredients caramelize quickly, so over high heat they can easily burn before the meat has time to cook through.
- 6
Toward the end of grilling, move the wings briefly over higher heat until the skin is deep golden, crisp, and the meat inside is fully cooked through.
Dip
- 7
In a clean bowl, mix the plain yogurt with the sour cream, finely chopped chives, crushed garlic, and lemon juice.
- 8
Season the dip with salt and black pepper, then chill it in the refrigerator for a few minutes so it is pleasantly fresh when served with the grilled meat.
Serving
- 9
Let the finished wings rest briefly after removing them from the grill so they stay juicy and the hot juices do not run out unnecessarily when bitten into.
- 10
Serve the wings on a platter with the cold chive dip in the center of the table, because this is exactly how they work best for a summer garden gathering.
More tips:
If you have time, let the wings marinate for up to 2 hours in the refrigerator. the flavor will be deeper and the surface will caramelize even better after grilling.
It is better to grill the wings over medium heat rather than directly over a high flame, because the honey in the marinade burns quickly over intense heat.
