Grilled Chicken Skewers with Herb Yogurt and Corn Salad

Juicy chicken skewers with colorful vegetables are perfect for summer grilling in the garden and relaxed outdoor gatherings. The meat only needs a short soak in a simple marinade of oil and spices, so the hands-on work takes just a few minutes. A refreshing lemon yogurt dip and a fresh corn salad lighten the meal and pair beautifully with the smoky flavor from the grill. Serve the skewers straight from the grill pan while tender.

Skewers
Herb Yogurt
Corn Salad

Step by step process

Preparing the Skewers

  1. 1

Cut the chicken breasts into large bite-sized pieces. Cut the red bell pepper, zucchini, and red onion into similarly sized chunks so everything cooks evenly on the skewers.

  2. 2

In a bowl, mix the olive oil, garlic, paprika, cumin, oregano, salt, and pepper. Add the chicken and vegetables, then coat everything thoroughly in the marinade.

  3. 3

Cover the bowl and let the mixture rest for at least 20 minutes so the chicken absorbs the seasoning and stays juicy after grilling.

  4. 4

Thread the chicken and vegetables alternately onto skewers. Arrange the pieces snugly, leaving small gaps for air to circulate.

Herb Yogurt

  1. 5

Mix the Greek yogurt with finely grated lemon zest, lemon juice, crushed garlic, and chopped parsley, then season the dip with salt and pepper and chill it.

Corn Salad

  1. 6

Drain the corn, dice the tomato, cucumber, and spring onion into small pieces, add the olive oil and wine vinegar, then lightly season the salad with salt and pepper and toss well.

Grilling

  1. 7

Heat the grill or grill pan to medium-high and cook the prepared skewers for about 10 to 12 minutes. Turn them several times with tongs during grilling.

  2. 8

Once the chicken is cooked through and lightly charred at the edges, move the skewers off direct heat. Let them rest for a couple of minutes.

Serving

  1. 9

Arrange the chicken skewers on a large platter. Serve with herb yogurt and fresh corn salad. A proper summer spread for outdoor dining.

More tips:

If you have time, let the chicken marinate for up to 2 hours in the fridge, so the spices develop and the meat stays juicier.

Do not grill the skewers over excessively high heat, because the vegetables would burn quickly before the chicken is fully cooked inside.
