Marinated grilled chicken breast with garlic and herbs

Marinade

For the grilled chicken breast, first prepare the marinade. In a bowl mix the olive oil, pressed garlic, lemon juice, sweet paprika, thyme and rosemary. Season with salt and pepper.

Cut the meat horizontally so it has the same thickness all over, or pound it lightly. An even slab cooks through evenly and stays juicy.

Put the slices into the marinade, coat them thoroughly and let them rest for at least 30 minutes in the fridge. If you have time, even overnight works.
Grilling

Heat the grill or a grill pan thoroughly. Take the meat out of the marinade and let the excess drip off, otherwise it would burn on the hot grate.

Grill the slices for 4 to 6 minutes per side depending on thickness. Turn them only once so nice grill marks form and the juices stay inside.

Move the cooked meat to a board and let it rest for 5 minutes under aluminum foil. Then slice it on the bias and serve with grilled vegetables or a fresh salad.
More tips:
Don't overdo the lemon juice in the marinade and don't leave the meat in it too long. The acid otherwise tightens the fibers and the breast dries out after grilling.
A thermometer is your safety net. In the center of the thickest spot the chicken reads 75 degrees Celsius, and then it's done while still juicy.
