Nigerian grilled beef skewers suya

Step by step process
Preparing the spice blend and meat

For the suya, slice the beef across the grain into thin strips about 5 mm thick. Mix the ground peanuts with peanut butter, sweet and hot paprika, cayenne pepper, ground cumin, ginger, turmeric, crushed garlic, grated onion, peanut oil and salt. A thick spiced paste forms. It is the base of the whole recipe.
Marinating

Coat the beef strips evenly with the peanut yaji marinade on all sides. Layer them in a dish, cover with cling film and chill for at least 2 hours. It is best to leave the meat overnight. The spices then reach deep into the fibers.
Grilling and serving

Thread the marinated strips lengthwise onto wooden or metal skewers. Press each strip flat so it cooks evenly. Grill over medium-high direct heat for 3 to 4 minutes per side. The meat should take on a golden brown crust.

Sprinkle the finished skewers with the leftover spiced peanut mix and serve at once. Suya is traditionally served with raw onion and tomatoes. Fresh cabbage on the side works well. Serve it hot.
More tips:
Slice the meat slightly frozen, thin strips then hold their shape and thread easily.
Grill over high heat briefly, overcooked suya dries out and turns tough.
