Nigerian steamed bean pudding moin moin

Step by step process
Soaking and preparing the beans

Good moin moin starts with perfectly peeled beans. Cover the beans with cold water and let them swell for at least eight hours, ideally overnight. Move the soaked beans to a bowl and rub them between your hands until the skins split. Add water and pour off the skins that float up. Repeat until only clean white halves remain. This step takes patience.
Blending the mixture

Put the peeled beans in a blender with the onion, red pepper and chili. Pour in 200 ml of water and blend until completely smooth. Do not rush it. Mix in the palm oil with the eggs and add salt. The batter should resemble a thick pancake batter.
Steaming

Fill silicone molds or small metal cups three-quarters full and seal them tightly. Pour about three centimeters of water into a pot and add the filled molds. Cover with a lid. Steam over medium heat for about 45 minutes.

The finished pudding should feel firm and a toothpick should come out clean. Let it rest for a moment. Serve it warm with fish or chicken, or simply with tomato sauce.
More tips:
Peel the beans very thoroughly, even a few skins spoil the smooth texture.
Fill the molds only three-quarters full, the mixture expands as it steams.
