Preparation

    Pour coconut milk and whole milk into a large bowl, add honey, vanilla extract, and a pinch of salt, and whisk well until the sweetener dissolves.

    Sprinkle in the chia seeds, stir thoroughly again, and let sit for 10 minutes to allow the seeds to swell.

    TIP: 

    When soaking chia seeds, stir the mixture regularly to prevent the seeds from clumping and to keep the pudding smooth. If needed, stir after 5-6 minutes and again after 10 minutes.

    After 10 minutes, stir the mixture once more to evenly distribute the seeds and prevent clumping. Divide into 4 glasses.

Chilling

    Cover the prepared glasses and place them in the refrigerator for at least 4 hours, ideally overnight, until the pudding thickens.

    Peel the mango, remove the pit, and dice the flesh. Squeeze the lime juice and blend it together with the mango and honey until smooth.

Serving

    Spoon the mango purée over the chilled chia pudding, sprinkle with shredded coconut, and garnish with mint leaves.

    Serve chilled. If you prefer a thinner consistency, briefly stir the pudding before serving and, if needed, add a tablespoon of milk.

More tips:

After the first 10 minutes of resting, always stir the pudding again - this prevents the seeds from clumping and ensures even thickening.

You can also use frozen mango. let it thaw partially before blending for a smoother purée.
