Cream

Start by making the quark cream for the parfait. Peel the ripe banana, break it into chunks, and drop it into the blender. Add the soft quark, Greek yogurt, chia seeds, and vanilla extract. Blend everything into a smooth, thick, and creamy mixture with no lumps.
Assembly

Set about one third of the raspberries aside for decoration. Lightly crush the rest with a fork into a coarse purée. Divide it among the bottoms of four glasses to form an even bottom layer.

Gently spoon the quark cream over the raspberry layer. Add it one spoonful at a time so the layers stay separate. Smooth the top of each glass and decorate it with the reserved whole raspberries.

Serve immediately. Or chill the glasses briefly in the fridge for a firmer, thicker texture. Before serving, garnish each portion with fresh mint leaves or a handful of granola for a crunchy contrast.
More tips:
Use very ripe bananas with speckled skins, as they naturally sweeten the cream without the need for any additional sweetener.
If you want an even thicker texture, let the finished glasses rest in the fridge for 20 minutes before serving so the chia seeds can absorb more liquid.
