Step by step process

Cream

    Peel the banana, break it into pieces, and blend it with the soft quark, Greek yogurt, chia seeds, and vanilla extract until smooth and thick.

    TIP: 

    When stirred into cream, chia seeds quickly absorb liquid and naturally thicken the mixture. They work well in creams, smoothie bowls, and layered desserts served in glasses. For a smoother texture, let the mixture rest briefly or use ground chia seeds.

Assembly

    Set about one third of the raspberries aside, lightly crush the rest with a fork, and divide them among the bottoms of four glasses.

    Carefully spoon the quark cream over the raspberry layer and decorate the top of each glass with the reserved raspberries.

Serving

    Serve immediately, or chill the parfaits briefly before serving if you want a firmer, thicker consistency.

More tips:

Use very ripe bananas with speckled skins, as they naturally sweeten the cream without the need for any additional sweetener.

If you want an even thicker texture, let the finished parfaits rest in the fridge for 20 minutes before serving so the chia seeds can absorb more liquid.
