Yogurt parfait with mixed berries is a dessert that looks stunning yet comes together in just fifteen minutes. Four glasses hold alternating layers of tangy Greek yogurt stirred with vanilla extract, crunchy muesli, and juicy raspberries, blueberries, or blackberries. Three tablespoons of honey are the only sweetener and mint leaves the only garnish. Serve right away so the muesli stays crisp.

Step by step process

Preparation

    Sort the berries, rinse under cold water, and pat thoroughly dry with a towel.

    In a bowl, mix the Greek yogurt with vanilla extract until the mixture is smooth and creamy.

Assembling the Parfait

    Sprinkle a thin layer of muesli into the bottom of four glasses and drizzle a little honey over it.

    Add a layer of yogurt, spread some of the berries on top, and gently smooth with a spatula.

    Repeat the layers of muesli, yogurt, and berries, then finish by lightly drizzling the remaining honey on top.

Serving

    Garnish the parfait with mint leaves and, if desired, a few whole pieces of fruit.

    Serve immediately so the muesli stays crunchy, or chill the parfait briefly in the fridge for about ten minutes.

More tips:

To keep the muesli extra crunchy, add the top layer just before serving.

Thaw frozen mixed berries first and drain off excess juice, otherwise the parfait will quickly go soggy.
