Preparation

Sort the berries, rinse under cold water, and pat dry thoroughly with a towel.

In a bowl, mix the Greek yogurt with vanilla extract until smooth and creamy.
Assembly

Sprinkle a thin layer of granola into the bottom of four glasses and drizzle a little honey over it.

Add a layer of yogurt, spread some of the berries on top, and gently smooth with a spatula.

Repeat the layers: granola, yogurt, berries, and finish by lightly drizzling the remaining honey on top.
Serving

Garnish the parfaits with mint leaves and, if desired, a few whole pieces of fruit.

Serve immediately so the granola stays crunchy, or chill the parfaits briefly in the fridge for about ten minutes.
More tips:
To keep the granola extra crunchy, add the top layer just before serving.
