Blueberry Yogurt Popsicles

Make the mixtures

For the blueberry yogurt popsicles, first blend the blueberries with lemon juice into a smooth puree. Set a few whole blueberries aside for decoration.

In a bowl, stir the Greek yogurt with honey and vanilla extract into a smooth, glossy mixture with no lumps.

Gently fold part of the blueberry puree into the yogurt so pink streaks appear. Do not stir it fully smooth, the marbled look is pretty.
Fill and freeze

Pour the yogurt mixture and the remaining blueberry puree into the molds in alternating layers. Run a skewer gently between the layers so the colors connect.

Insert wooden sticks or fit the mold lids, then tap the molds on the counter to release air bubbles.

Put the molds in the freezer and let them set for 4 to 6 hours, until the popsicles are completely firm.

Before unmolding, dip the molds in warm water for 10 seconds so the popsicles slide out easily. Decorate with the reserved blueberries and serve right away.
More tips:
Instead of honey you can use maple syrup or agave syrup, and the flavor stays gently sweet.
If you have no molds, yogurt cups and wooden sticks pushed in after an hour of freezing work well.
