Strawberry Frozen Yogurt Popsicles

Preparing the strawberry mixture

Strawberry frozen yogurt popsicles start with the fruit: wash the strawberries thoroughly under cold water, carefully remove the green tops and cut them into smaller pieces. Set about a third of the chopped strawberries aside if you want visible chunks of fruit in the finished dessert.

Tip the remaining strawberries into a tall container and blend them with an immersion blender until completely smooth. If the tiny seeds bother you, push the puree through a fine sieve, otherwise you can use it right away.
Mixing and freezing

In a larger bowl, combine the Greek yogurt with honey and vanilla extract and whisk everything into a smooth, glossy mixture. Taste it, and if your strawberries are less sweet, add another spoon of honey to sweeten.

Add the strawberry puree to the yogurt along with the reserved chopped pieces. A few strokes create a pretty marbled pattern, or stir thoroughly if you want an even pink color.

Divide the finished mixture into popsicle molds, insert wooden sticks and tap gently against the counter to release any air bubbles. Place the molds in the freezer and let them set for 4 to 6 hours, ideally overnight.

Just before serving, dip the bottom of the molds in warm water for a few seconds so the popsicles release easily. Pop them out and serve right away, or wrap them individually and store them back in the freezer.
More tips:
No popsicle molds? Use small cups and insert the sticks only once the mixture has set slightly, after about an hour in the freezer.
Swap the honey for maple syrup or mashed ripe banana if you want the popsicles completely free of added sugar.
