Strawberry Basil Frozen Yogurt Popsicles

Making the strawberry basil mixture

For the strawberry basil frozen yogurt popsicles, first rinse the strawberries, remove the green tops and cut larger berries into quarters.

Put the strawberries in a blender together with the Greek yogurt and honey. Blend into a smooth pink puree with no large pieces.

Rinse the basil leaves, pat them dry and chop finely. Stir them into the mixture along with the lemon juice and mix briefly so small green specks stay visible.

Taste the mixture. If the strawberries are less sweet, add a little more honey and stir again.
Filling the molds and freezing

Place a few pieces of cut strawberries and a basil leaf at the bottom of each mold for color and aroma.

Pour the yogurt mixture into the molds and leave about 1 cm of free space at the top, since it expands slightly while freezing.

Insert a wooden stick into each mold. If the handle will not stay upright, let the popsicles set for 30 minutes and push the stick into the semi-firm mixture.

Move the molds to the freezer and let them set for 4 to 6 hours, until the popsicles are firm all the way through.

Before serving, dip the molds in lukewarm water for 10 seconds and gently slide the popsicles out.
More tips:
Chop the basil only just before blending, otherwise it darkens and loses its fresh aroma.
If you do not have classic popsicle molds, use small cups and insert the sticks after 30 minutes of pre-freezing.
