To make basil pesto, pick fresh leaves. Rinse them briefly, dry them well, and remove any tough stems.

Finely grate the Parmesan. Peel the garlic and get the pine nuts ready for blending.
Blending

Put the basil, pine nuts, garlic, and half of the olive oil in a blender.

Blend in short pulses into a coarse paste so the leaves don't heat up unnecessarily.

Add the grated Parmesan and the rest of the oil. Blend briefly again into a smoother sauce.

Taste and season with salt. Transfer the finished paste to a clean jar with a spatula.

Serve with hot pasta, on toasted baguette, or as a fresh finishing touch for grilled vegetables and summer salads.
More tips:
Store the pesto in a jar covered with a thin layer of olive oil. It will keep in the refrigerator for about 4 days.
Blend briefly and in batches, as overheated basil quickly darkens and loses its fresh flavor.
