Preparation

    Rinse the basil leaves only briefly, dry them well, and remove any tough stems.

    Finely grate the Parmesan, peel the garlic, and prepare the pine nuts for blending.

Blending

    Place the basil, pine nuts, garlic, and half of the olive oil in a blender.

    Blend in short pulses into a coarse paste so the basil does not heat up unnecessarily.

    Add the grated Parmesan, the remaining olive oil, and blend briefly again into a smoother sauce.

    Taste the pesto, season with salt as needed, and transfer it with a spatula to a clean jar.

Serving

    Serve the pesto with hot pasta, on toasted baguette, or as a seasoning for grilled vegetables.

More tips:

Store the pesto in a jar covered with a thin layer of olive oil. it will keep in the refrigerator for about 4 days.

Blend briefly and in batches, as overheated basil quickly darkens and loses its fresh flavor.
