Preparation

    Rinse the wild garlic thoroughly in cold water and dry it in a kitchen towel.

    Finely grate the Parmesan so it blends quickly into the pesto with the other ingredients.

    Briefly toast the pine nuts in a dry pan, just until fragrant.

    TIP: 

    Toast the nuts in a dry pan over medium heat, stirring or shaking them often. As soon as they become fragrant and lightly golden, immediately transfer them out of the pan so they do not burn.

Blending

    Place the wild garlic, pine nuts, Parmesan, and lemon juice in a blender.

    Start blending and gradually pour in the olive oil until a thick pesto forms.

    TIP: 

    Pour the oil into the pesto gradually while blending so the ingredients combine evenly. Add it in small amounts to fine-tune the consistency depending on whether you want a thicker pesto for spreading or a thinner one for pasta.

    Taste the pesto, season with salt and pepper, and briefly blend to the desired texture.

Storage and Serving

    Transfer the finished pesto to clean jars and smooth the surface with a spoon.

More tips:

Store the pesto in the refrigerator and always cover the surface with a thin layer of olive oil to prevent browning.

Blend the wild garlic briefly, as prolonged blending can heat it up and make it unnecessarily bitter.
