No yeast, no rising, no kneading. This yogurt bread brings plain yogurt together with flour and salt into a soft dough that goes straight into the oven. The acid in the yogurt reacts with the baking powder and lifts the crumb, so the loaf stays soft inside and crisp on top. You can pull it off even without any baking experience, and it fills the whole apartment with a fresh-baked smell. This 3-ingredient bread is the answer when you run out of bread and do not want to wait half a day for a sourdough starter.

Mixing the Dough

    This yogurt bread needs no yeast and no rising, so heat the oven to 200 °C right away and line a baking sheet with parchment paper to have everything ready. In a larger bowl, thoroughly stir the flour with the baking powder and salt so the leavening spreads evenly throughout.

    Add the plain yogurt to the dry mixture and bring it together into a soft dough with a wooden spoon. Do not knead it for long. A few turns are enough, until the ingredients come together and the dough holds its shape. If it sticks to your hands, add a spoonful of flour.

    TIP: 

    Gently fold dry ingredients into the dough using a spatula or spoon just until combined, so the dough remains moist and the baked goods soft, avoiding a tough texture caused by overmixing.

Shaping and Baking

    Turn the dough out onto a floured surface and gently shape it by hand into a round loaf about a palm high. Move it onto the prepared baking sheet. Score a cross about a centimeter deep across the top with a sharp knife so the bread opens up and bakes through evenly.

    Bake for 40 to 45 minutes, until the crust turns golden and the bottom sounds hollow when tapped. Let the finished loaf cool on a rack for at least 20 minutes. Only then slice it, so the crumb stays soft and does not crumble.

    TIP: 

    Tap the bottom of the bread with the back of a knife. A hollow sound means the bread is done. A dull sound indicates the internal structure is not yet ready, bake for another 5-10 minutes.

More tips:

Swap the yogurt for sour cream or kefir if you have another cultured dairy product at home. The acid in them works with the baking powder just as well.

Stir a handful of chopped herbs, seeds, or grated cheese into the dough when you want to take the flavor further.
