Preparing the mango and gelatin

Peel the ripe mango, cut the flesh away from the pit, and blend it until smooth into a fine mango puree. This mango pudding lives and dies by the quality of the fruit, so reach for truly ripe, fragrant mangoes.

Place the gelatin sheets in a bowl of cold water. Let them bloom for about five minutes until they soften and become easy to dissolve later.
TIP:Place the gelatin in cold water for 10-15 minutes, never in hot water. Cold water prevents clumping and ensures even dissolution. Blooming is the first and critical step before dissolving in hot liquid.
Mixing the cream

Gently warm the coconut milk with the powdered sugar in a saucepan until the sugar dissolves. Do not let the mixture boil. A temperature of around sixty degrees is enough, otherwise the milk could curdle.
TIP:Always add it to soups or sauces over low heat, stirring constantly. A vigorous boil causes the fat to separate from the water, instead of a creamy consistency, you'll end up with a watery, grainy liquid.

Squeeze out the softened gelatin and stir it into the warm coconut milk until it dissolves completely and the mixture stays smooth.

More tips:
For a vegan version, replace the gelatin with two grams of agar, briefly simmered in the coconut milk, and leave out the cream or use a plant-based alternative.
Serve the mango pudding well chilled, as the flavor of mango and coconut stands out most when cold.
