Rinse the cod under cold water, pat it dry, and cut it into large cubes - the key to a great moqueca so the fish holds its shape while simmering.

Drizzle the fish with lime juice, season lightly with salt and pepper, and let it rest for ten minutes at room temperature.

Slice the onion into thin half-moons, cut the peppers into strips, slice the tomatoes, and finely chop the garlic.
Rice

Rinse the rice several times, add it to a pot with 500 ml of salted water, and cook covered for about 12 minutes until almost tender.

Remove the pot from the heat, let the rice finish steaming for another 10 minutes, and fluff it with a fork before serving.
Moqueca

Heat the vegetable oil in a wide pot, spread half of the onion, peppers, and tomatoes over the bottom, and season the vegetables lightly with salt.

Arrange the cod pieces over the vegetables and add the garlic and cilantro. Cover with the remaining vegetables so the fish cooks evenly.

Pour in the coconut milk and bring to a very gentle simmer. Cook for 15 to 18 minutes without vigorous stirring, until the fish turns opaque and begins to flake.

Taste the sauce and add more salt or remaining lime juice if needed. Gently shake the pot instead of stirring.
Serving

Divide the rice among plates, add a generous portion of moqueca with the sauce, and serve immediately while the coconut sauce is hot and fragrant.
More tips:
Do not stir the fish in the sauce with a spoon. Just gently shake the pot so the pieces do not fall apart.
If the lime is especially tart, add part of the juice only at the very end so the coconut sauce stays delicate.
