Preparation

    Peel the mango, cut the flesh away from the stone, and chop into smaller cubes so it blends more easily.

    For extra-cold lassi, chill the glasses and use ice or pre-chilled ingredients.

    TIP: 

    Before pouring the lassi, chill the glasses in ice water or in the refrigerator, and add ice cubes while blending. This will keep the drink colder and fresher for longer.

Blending

    Place the mango, plain yogurt, whole milk, granulated sugar, ground cardamom, and a pinch of salt into a blender.

    Add ice cubes and blend for 30-60 seconds until smooth, frothy, and free of lumps.

    TIP: 

    Use short pulses and gradually incorporate the ice. After each pulse, wait for the air to incorporate. The result is a smooth, airy texture without lumps.

    Taste and adjust the sweetness with sugar and the thickness with milk. you can also stir in rose water for a floral note.

Serving

    Pour the lassi into chilled glasses, optionally dust with a pinch of ground cardamom, and sprinkle with chopped pistachios.

More tips:

Use fully ripe, fragrant mangoes (e.g., Alphonso or Ataulfo). if using canned mango purée, reduce the sugar and milk according to its sweetness and thickness.

For a lighter, vegan version, replace the plain yogurt and milk with coconut yogurt and plant-based milk. keep the cardamom for authentic flavor.
