Tropical Cocktail with Mango and Pineapple

Step by step process
Fruit Preparation

Peel the mango, cut the flesh away from the stone and dice into small cubes so they blend more easily.

Remove the skin and tough core from the pineapple and cut into roughly 2 cm cubes. Keep a few slices aside for garnish.

Squeeze the juice from the limes into a small bowl and remove any seeds.
Blending the Cocktail

Add the diced mango with pineapple, lime juice, orange juice and coconut milk to a blender. Everything is together in the blender.

Add the maple syrup to adjust the sweetness and a handful of ice, then blend on high speed for about 30 seconds until smooth and creamy.

Taste and adjust sweetness with more syrup or tartness with a squeeze of lime juice if needed.
Serving

Fill tall glasses halfway with ice to keep the cocktail chilled for longer.

Pour it into the prepared glasses and garnish with a pineapple slice on the rim, a lime wheel and a sprig of fresh mint.

Serve immediately with a wide straw so that small fruit pieces do not block the opening.
More tips:
If you have time, place the diced mango and pineapple in the freezer for an hour. The cocktail will then have a thicker, smoothie-like consistency without needing as much ice.
Instead of maple syrup, try agave nectar or honey, each sweetener gives the drink a slightly different character.
