Preparing the ingredients

Start with the fruit: peel the fresh pineapple, remove the hard core and cut the pulp into smaller pieces to obtain 120 g. Fresh pineapple gives the drink a brighter, less sweet flavor than canned pineapple.

Prepare the ice and carefully measure the coconut milk, white rum, and pineapple juice. Chilled ingredients ensure the drink is fresh and well chilled right away.
Mixing the cocktail

Place the chopped pineapple, coconut milk, white rum, pineapple juice, cane sugar (to taste), and ice into the blender.

Blend on high speed for about 30–45 seconds until the mixture is smooth, creamy and the ice is completely crushed. For a thicker consistency, add more ice and blend briefly again.
Serving and decorating

Divide the cocktail into two tall glasses.

Garnish each glass with a slice of pineapple and a sprig of mint.
More tips:
For an extra creamy texture, you can use coconut cream instead of coconut milk.
If you don't have fresh pineapple, you can also use frozen pineapple, which will also replace some of the ice.
