Peel the fresh pineapple and cut it into smaller pieces to obtain 120 g of pulp.

Prepare the ice, measure the coconut milk, white rum, and pineapple juice.
Mixing a cocktail

Place the chopped pineapple, coconut milk, white rum, pineapple juice, cane sugar (to taste), and ice into the blender.

Blend at high power for about 30-45 seconds until the mixture is smooth and the ice is completely crushed.
Serving and decorating

Divide the cocktail into two tall glasses.

Garnish each glass with a slice of pineapple, or even a sprig of mint or a cocktail cherry.
More tips:
For an extra creamy texture, you can use coconut cream instead of coconut milk.
If you don't have fresh pineapple, you can also use frozen pineapple, which will also replace some of the ice.
