Step by step process

Preparation

  1. 1

    Chill four highball glasses in the freezer or fill them with ice for a few minutes to get them well chilled.

    Measure the dark rum, lime juice, simple syrup and optional grenadine. Prepare the soda water and garnishes.

Mixing

    Place a few ice cubes into a mixing glass or shaker. Pour in the rum, lime juice, simple syrup and grenadine and shake for 10-15 seconds until the mixture is well chilled.

    TIP: 

    When shaking, hold the shaker firmly and shake for 10-15 seconds until the mixture cools and a fine mist forms on the surface. This yields better mixing and less dilution.

    Fill the prepared glasses with the remaining ice. Strain the cocktail through a fine sieve into the glasses and top each with soda water. Stir briefly and gently.

    TIP: 

    Use a Hawthorn filter together with a fine sieve, and pour the drink slowly along the inside wall of the glass. This will remove small ice chips and preserve the delicate fizz of the soda.

Serving

    Garnish each glass with an orange slice and a cocktail cherry.

  2. 6

    Serve immediately, well chilled.

More tips:

Don't have ready-made simple syrup? Mix 60 ml of hot water with 60 g of granulated sugar, stir until the sugar dissolves, and let the syrup cool before using.
