Hurricane with Rum and Passion Fruit

Step by step process
Preparing the Glasses

Prepare four tall hurricane glasses and place them in the freezer for a few minutes, or fill them with ice to chill them thoroughly.

Slice the oranges for garnish, rinse the mint sprigs, and prepare the cocktail cherries so they are ready to use when serving.
Mixing the Cocktail

Into a large shaker filled halfway with ice, pour the white rum, dark rum, passion fruit syrup, orange juice, and freshly squeezed lemon juice.

Seal the shaker tightly and shake vigorously for about 15 seconds, until the contents are well chilled and frost appears on the outside of the shaker.
TIP:Shake vigorously for at least 15-20 seconds. Visible frost on the shaker indicates that the cocktail is properly chilled and ingredients are well mixed. If no frost appears, the cocktail will be too warm.

Discard the ice from the chilled glasses, fill them with fresh crushed ice, and strain the shaker contents through a strainer evenly into all four glasses.
Serving

Carefully pour about 10 ml of grenadine down the side of each glass. it will sink to the bottom and create the characteristic red gradient typical of the Hurricane.
TIP:Pour the denser ingredient slowly down the inner wall of the glass or over the back of a spoon. Grenadine will settle to the bottom and create a sharp layer. Slowness and care are key, this is how you achieve a clean color gradient without mixing.

Garnish each glass with an orange slice on the rim, a cocktail cherry, and a sprig of fresh mint, and serve immediately with a straw.
More tips:
If you don't have passion fruit syrup, use the same amount of pulp from 2-3 fresh passion fruits mixed with a tablespoon of sugar and strained through a sieve, the flavor will be more vibrant and aromatic.
