Christmas Punch with Rum and Fruit

Preparing the Fruit

Make this Christmas punch with rum. Scrub the orange and lemon thoroughly under hot water and pat dry to remove any wax from the skin.

Cut the orange into thicker rounds about 0.5 cm thick and the lemon into thin slices. Core the apple and cut into small cubes or slices.
Making the Punch

Pour the red wine, orange juice and apple juice into a large pot. Add the cane sugar and honey and stir well to combine.

Add the orange and lemon slices and the apple pieces, then add the cinnamon sticks, cloves, star anise and allspice.

Heat over low heat for about 20-25 minutes, making sure the liquid never comes to a boil (max. around 80 degrees C / 175 F). Boiling would evaporate the alcohol and spoil the flavour.

Once the punch is deeply fragrant with spices, remove the pot from the heat and stir in the dark rum. Cover and let rest for 2-3 minutes so the flavours can meld.
Serving

Strain the punch through a sieve into a carafe, or ladle it directly into heatproof mugs or glasses.

Garnish each serving with a fresh orange slice and a cinnamon stick, and serve hot.
More tips:
For a children's version, leave out the rum entirely and replace the wine with grape or cherry juice. The spices and citrus stay the same.
The choice of wine will affect the final flavour. Try a medium-dry or semi-dry red wine such as Merlot or Zweigelt. Overly sweet varieties can overpower the punch.
