Classic Mojito with White Rum and Mint

    Wash the limes well, cut each one into small wedges and set aside one nice piece from each lime for garnish. Pluck most of the leaves from the mint sprigs and keep four tops aside.

    Divide the lime wedges, cane sugar and mint leaves among four tall glasses. Then gently muddle everything so the lime releases its juice and the mint its aroma, but without turning bitter.

    TIP: 

    Don’t crush herbs and citrus in the glass with force. Just gently muddle them a few times to release their aroma and juice. Over-muddling can draw bitterness out of both the mint and the citrus peel, which can worsen the drink’s flavor.

    Pour the white rum into each glass, add plenty of ice almost to the top and briefly stir so the sugar starts to dissolve and the flavors combine evenly.

    Finally, top up each glass with soda water, gently stir from the bottom up and garnish the cocktail with the reserved piece of lime and a mint top.

More tips:

Do not muddle the mint too hard, otherwise bitter notes will be released and the mojito will lose its characteristic freshness.

If you want a more pronounced citrus flavor, let the lime and sugar rest in the rum for one to two minutes after muddling.
