Step by step process

Preparation

    Rinse the mint, pat dry, and strip the leaves from the thicker stems. Reserve a few nice leaves for garnish.

    Cut the lime into thin slices or half-moons to garnish the glasses.

    Measure the lime juice and sugar syrup, and prepare the sparkling water and ice.

Mixing

    Divide the mint leaves among four tall glasses, then add the lime juice and sugar syrup.

    Gently bruise the mint with a wooden muddler or the end of a spoon to release the aroma, but avoid crushing it to a pulp.

    TIP: 

    When muddling mint, use a wooden muddler and press the leaves gently against the rim of the glass. A brief press releases the aromatic oils. Avoid pressing to a paste, or you risk bitterness.

    Fill the glasses with ice almost to the top and top up with sparkling water to about three-quarters full.

    Stir briefly and gently so the ingredients distribute evenly in the water.

Serving

    Garnish each mocktail with a lime slice and the reserved mint leaves.

    Serve immediately, well chilled. If needed, adjust the acidity or sweetness with an extra squeeze of lime or a dash of syrup.

More tips:

You can replace ice cubes with crushed ice. The drink will be fresher but will dilute faster, so reduce the sparkling water slightly.
