Mint Julep with Bourbon and Mint

Preparation

Place glasses or metal julep cups in the freezer for 5 minutes to chill.

Rinse the mint gently in cold water and dry with a paper towel so it doesn't lose its aroma.

Prepare crushed ice by putting ice cubes into a clean cloth and crushing them into small pieces with a mallet or muddler.
TIP:Wrap the ice in a clean towel and crush it with a mallet from the sides until you get fine, even snow. Make sure the pieces aren’t too small and that the ice doesn’t spray. Wear gloves and be careful.
Mixing

Place 1 sprig of mint in each chilled glass and pour in 15 ml simple syrup. lightly bruise the mint with a muddler just enough to release its oils, not into a pulp.
TIP:When muddling mint, do not press the leaves. Hold them loosely and gently bruise them against the sides of the glass with short motions until they release their aroma. Over-crushing will cause bitterness and a loss of texture. Check the aroma after a few motions.

Fill the glasses about two-thirds full with crushed ice, add 60 ml bourbon to each, and stir briefly until the glass sides begin to sweat.

Top with another layer of crushed ice above the rim and stir once more briefly so the drink cools evenly.
Serving

Gently clap the second sprig of mint between your hands to release its aroma, and tuck it into the mound of crushed ice.

Serve immediately with a short straw so the mint aroma stands out while drinking.
More tips:
Don't muddle the mint too hard or for too long. releasing too many bitter compounds will spoil the drink's fresh taste.
Enough ice improves texture and temperature. crushed ice creates the characteristic snowy cap and encourages slower sipping.
