Preparation

    Cut the watermelon, remove the seeds, and cut the flesh into 2-3 cm cubes. Place them in a large bowl.

    Wash the limes well, grate a little zest if desired, and squeeze the juice into a small bowl.

    TIP: 

    Before juicing the limes, grate a thin strip of zest (without the white part) and mix it into the dressing for a fresh aroma. Only then should you squeeze out the juice.

    Strip the mint leaves from the stems, chop some finely, and set aside a few whole leaves for garnish.

    Mix the lime juice with olive oil to make a light, citrusy dressing.

    TIP: 

    Add lime juice to olive oil and, while whisking constantly, create a smooth emulsion. Salt and pepper to taste, and, if needed, add honey to balance the acidity.

Cooking

    Add the chopped mint to the bowl with the watermelon, pour over the dressing, and very gently toss so the cubes don't break.

    If using feta, crumble it into smaller pieces and gently fold it into the salad with short spoon movements.

Serving

    Season with salt and pepper to taste just before serving. Garnish with whole mint leaves and, if desired, a pinch of lime zest.

    Serve well chilled. Let the salad rest in the fridge for 5-10 minutes to allow the flavors to meld.

More tips:

Add salt only at the end. otherwise, the watermelon will quickly release juice, and the salad will become watery.

For extra refreshment, use a pre-chilled watermelon and bowl. A little lime zest will also enhance the flavor.
