Watermelon Lemonade

Make refreshing watermelon lemonade from fresh watermelon, lemon juice, and water, lightly sweetened with sugar. Ideal for hot days, serve chilled with ice cubes and mint leaves.

Step by step process

Preparation

    Remove the rind and any seeds from the watermelon and cut the flesh into cubes. You need at least 400 g of flesh to make a good watermelon lemonade with an intense fruity flavour.

    Cut the lemons lengthwise. Use a citrus juicer to extract the juice and catch any seeds. You will need about 60 ml of juice, which is roughly two medium lemons.

    TIP: 

    Tip: warm the lemon briefly (5-10 seconds) so the juice flows more easily. Cut it in half and squeeze the juice into a container. Catch the seeds, and if desired, squeeze the juice from both sides of each half. You'll get more juice.

    Measure the cold water and prepare the granulated sugar. Chilling the water in the fridge for at least 30 minutes beforehand helps keep the drink refreshing for longer.

Blending

    Place the flesh and sugar in a blender and blend for 30-60 seconds until you get a smooth purée.

    Pour through a fine sieve into a pitcher to strain out any coarse pulp.

    Stir in the freshly squeezed lemon juice and cold water in roughly a 1:1 ratio with the purée. Mix well, taste, and adjust the sweetness or add more lemon juice as needed. You can let the drink rest in the fridge for 10 minutes before serving so the flavours meld.

Serving

    Place 4 ice cubes in each glass.

    Fill the glasses with the chilled drink and stir gently.

    Garnish with fresh mint leaves or a lemon slice and serve immediately while the drink is still cold.

More tips:

For a sparkling version, replace half of the water with sparkling water and slightly reduce the amount of sugar.

Chill the watermelon and the glasses in the fridge beforehand. The lemonade will stay refreshing longer and dilute less from the ice.
